Does anyone have any experience with these knives in particular or in general? I am looking to buy a cleaver as a gift (for a Professional Chef) and would like some opinion or recommendations otherwise. Thanks!

I hear good things about them but they are a Ford Pinto of a Damascus knife.  Perhaps a gateway model.  A Damascus knife in many minds cannot be made in factory production, only by hand..

I second the Hattori recommendation. I love mine. Looks like a lot of the better ones are sold out.

They are sold out for now, but they have promised to honor my order placed almost a year ago for a VERY special chef's knife for me.
