My Bride and I have been trying to make time where we can sit down together and put down a recipe or two. Life is going 100 miles an hour like it does for most everyone!!! So I am going to give this a shot. Please remember I am a woodworker, truck driver & Survival instructor… not a Chef!!!
Mexican/American Lasagna
1 lb ground Beef or Venison (cooked)
1 lb breakfast sausage (Hot Jimmy Dean is what I like) (cooked)
Six large flour tortillas
1 cup frozen corn cornels
1 large can enchilada sauce (if you can make your own, go for it!!!)
1 can refried beans (maybe two)
1 can black beans
1 can black olives
9” X 13” casserole dish
Salt, pepper, sage, red pepper, jalapeño, and what ever you like for flavors
Any kind of cheese (about a pound)
Step 1. Take your casserole dish and put a nice layer of enchilada sauce on the bottom.
Layer # 1. Two flour tortillas, ground beef or venison, layer of jalapeños, little pepper
Layer #2. Two flour tortillas, refried beans and corn
Layer # 3. Two flour tortillas, breakfast sausage, black beans (season to your taste)
Put enchilada sauce on top and then some more cheese on top of that and pop in the oven.
Set oven to about 375 for 12-15 minutes to let cheese melt and help heat up foods not already cooked. Remove from oven add some sliced jalapeños and black olives!
Serve in squares!!!
