Pulled out the 25 YO CharBroil gas grill, cleaned it up and attached a rotisserie to it. Then, I cleaned up and trussed a 4 lb Boston Butt (down from 8#), slathered with yellow mustard and seasoned with Famous Dave's Devil's Spit Rub overnight. Then injected with a little apple juice and water with some clean liquid from the water bath. Then I made a water bath with apple juice, red wine vinegar, a little water and about a shitload of Devil's Spit Rub. Made an apple juice/apple cider vinegar to spray with and alternating with the potent water bath baste till 170 dg. Wrapped in foil till 195 dg and added a Elderberry/honey/apple cider reduction for a very tasty glaze after putting back on the rotisserie to crisp up a little. All on some great Hickory wood. Add a little grilled corn on the cobb, and a couple of Olde Hickory Brewery Lindley Park Imperial Stouts..... What fun, and a nice treat for the tastebuds!
