Reading back through this thread reminded me of KOPP and times past..   

I have no idea what we/I will be fixing tonight, I know it will be Mexican themed. 

I have frozen (delicious) cooked pinto's and I do have some fish, but may go to the store and buy some lamb chunks or something to fill a roll-up.  Might buy some tequila. 

What are Y'all fixin to fix ?

Well spring shrimp season recently opened so I am thinking some shrimp tacos might be nice with a chilpote mayonnaise, lots of cilantro and lime juice.

I had some of my frozen pinto's and bought some shrimp, made some rice and some fresh guacamole.  We were going to do tacos but the rice and beans filled in for it..  Quite delicious but no pictures.
