The finish of the Water Buffalo filets.  The 4 hours in the smoke really did the job, I then cast-iron seared them and stuck them in our toaster over at 400º for a few minutes until they came to 137º.  They rested a bit too long, but we served them and they were Venezuelan tender, and VERY beefy tasting.  That much smoke did not distract from the flavor.  I dusted them with Dizzy Pigs Red Eye Express and served them unsauced.  Good along with some small baked sweet potatoes and a summer squash vegetable melange.
